Recipe: Simple Cabbage Soup

Cabbage soup has a bit of a bad name, but my version is tasty, and extremely easy to make. It is a very nourishing recipe, a Warm Blood and Qi tonic suitable for everyone. As a good Blood tonic it benefits general health, especially for weak, thin & dry people and is especially indicated for women of child bearing age. It also gently circulates Qi, so benefits Stagnation.

The beef stock and molasses add a richness and depth of flavour to the soup. It can be made with vegetable stock, but does not taste as rich, as looses a little of its therapeutic effect in this case.

Ingredients:

1 pt beef or veg stock
1 stick celery
1 carrot
1 onion
5 outer leaves of savoy cabbage (or other dark cabbage leaves)
Small bunch parsley
1/2 tsp blackstrap molasses

Directions:
Simmer stock in a pan, with chopped celery and onion. Stir in molasses. Simmer, covered for 10-15 mins, then add all other chopped ingredients. Simmer for another 10-15 mins until all ingredients tender. Blitz with a stick blender or in a food processor until smooth. Season to taste and serve immediately.
